Svenja loves Italy and Italian food This recipe is from her friend’s grandmother from the Emilia Romagna region. The friend was her ‘language tandem’ when she went to Italy on an exchange program during university and they used to bake these Piadina together. Svenja still bakes them regularly and then likes to remember the great time they had together.

PIADINA (10 pieces)

1kg flour
4g dried yeast
150ml olive oil
12g salt
warm water

Mix flour and yeast in a large bowl. Add the olive oil and knead with your hands. If the dough is too dry, add a little warm water. Add the salt and knead the dough until it is smooth and homogenous. Cover with a damp cloth and leave to rest for at least 30 minutes.
Roll out rounds. Heat some olive oil in a frying pan and bake the Piadina.
