QUARK PUDDING / TOPFENAUFLAUF
8g vanilla sugar (1 sachet)
1 vanilla pod
500g mixed berries, prepared
Line a sieve with a tea towel and place over a bowl. Put the quark onto the towel and leave to drain for 3-4 hours.
Separate the eggs and whip the egg whites until stiff.
Scrape the inside out of the vanilla pod.
Mix quark, semolina, flour, milk, sugar, vanilla and egg yolk together until creamy.
Fold in the egg whites.
Put the berries into an oven-proof dish and cover with the quark mixture.
Bake in a pre-heated oven at 165°C for approx. 25-35 minutes until golden.
